Overseeing food operations for the hotel and ART Bar on the rooftop, chef Chef Matthew “Birk” Birkenmeier aims to cook up artful dishes, offering a modern take on European cuisine with a few surprises.
The Ingredients of a Great Chef
Like everything we do or strive to represent, Chef Birk is also local. St. Louis-born and raised, Chef has been in the hospitality industry for a long time. He previously served as Executive Chef at other local hotels, including Hotel Saint Louis.
“I’ve been blessed to have numerous opportunities to work and be mentored by great owners, chefs, and managers in my life,” says Chef Matthew “Birk” Birkenmeier. Guests can expect artful dishes as a nod to the theater district but with unique takes on classic comforts from Europe.”
Chef Birk’s passion for cooking came from his grandfather, Eugene “Pop” Hartrich, who he’d argues was a world-class smoker. This passion took him on a culinary cruise of the high seas where he served as Chef de Cuisine for multiple Disney Cruiseline vessels. From there, he spent six years in Montego Bay, Jamaica working as the Chef de Cuisine for the Ritz-Carlton Golf and Spa Resort, and was the Corporate Chef and Managing Partner of Hard Rock Cafe. St. Louis called him back in 2016 with an opportunity to be the Executive Chef for Quincy Street Bistro.
